Einkorn Pancakes
- Ingredients
- 1.5 cups einkorn all purpose flour
- 1 Tablespoon sugar
- 2 teaspoons baking powder
- 0.5 teaspoon himalayan pink salt
- 0.5 teaspoon baking soda
- 2 large eggs
- 1.5 cups milk (buttermilk? hell no)
- 2 Tablespoons butter (or cocoanut oil)
- Pure maple syrup

- Large frying pan
- Medium mixing bowl
- Small mixing bowl
- Sturdy mixing spoon
- Graduated measuring cup
- Metal spatula for flipping
- Operations
- In the medium bowl, add einkorn flour, sugar, baking powder, baking soda, and salt. Mix well while dry.
- Beat the eggs and milk in the smaller bowl. Beat until uniform.
- Add the wet ingredients to the dry ingredients. Mix well.
- Let rest for most of a minute.
- Preheat the pan to 4. Add the cooking oil.
- Cook 1/4 cup of batter for 90 seconds to two minutes
- Flip. Cook for 90 seconds
- Remove to a plate. Repeat until batter is finished.
- Serving
- Drizzle the pancakes with maple syrup.
- Butter optional.
