Breakfast Quiche
- Ingredients
- Half a sweet yellow onion
- Ten slices of cooked bacon
- Twelve eggs
- Four slices of high fibre bread
- Two 7-oz tins of diced Ortega chilies
- Two packages of coarse grated Mexican two-cheese
- Tools
- Large stable cutting board
- Sharp paring knife.
- Blender
- 9 by 13 inch metal baking pan
- parchment paper
- PAM
- Large mixing spoon.
- Preparations, execution.
- Spray PAM onto the 13 x 9 inch metal baking dish.
- Cover the baking dish with parchment paper
- Place the bread in the bottom of the pan.
- Clean and dice the onion. Sprinkle over the bread.
- Drain the Ortega chilies. Sprinkle over the onions.
- Slice up the cooked bacon. Sprinkle over the chilies.
- Beat the eggs in the blender
- Pour the egg mixture over the bread, onions, chilies, and bacon.
- Cover with the shredded Mexican cheese.
- Preheat the oven to 350 degrees.
- Place the pan in the oven. Set for 30 minutes.
- When finished, take the pan out. Let it cool until ready to serve.
- Slice serving-sized sections. Serve on medium plates.
