Meat Loaf (Charlotte Collins)
- Ingredients
- One half small onion, diced.
- 2.0 pounds of grass fed 85% ground beef
- Two eggs
- 1.0 teaspoon fine (not coarse) pink Himalayan salt
- PAM
- Parchment paper
- One long tube of standard Ritz crackers
- 1.0 Tablespoon sriracha sauce.
- Trader Joe's natural ketchup
- Tools
- Large stable cutting board
- Sharp paring knife.
- One medium large mixing bowl.
- Measuring cup.
- Measuring spoons.
- 9 by 13 inch metal baking pan
- Large mixing spoon.
- Two disposable vinyl gloves for hand mixing.
- Preparations, execution.
- Clean and dice the onion. Save to a small bowl.
- Beat the eggs in the mixing bowl.
- Add the onions and the salt. Mix well.
- Add the sriracha sauce. Mix well.
- Crush the Ritz crackers in a Ziploc bag using the rolling pin.
- Add the crushed crackers to the mix.
- In a larger bowl, break up the two pounds of hamburger.
- Add the mixture. With gloves on, mix well.
- Spray PAM onto the 13 x 9 inch metal baking dish.
- Cover the sprayed pan with parchment paper.
- Place the hamburger mixture into the baking dish.
- Form into a mound along the long axis of the pan, separating the hamburger mixture from the two long sides of the pan.
- Preheat the oven to 425 degrees.
- Place the pan in the oven. Set for 60 minutes.
- With 10 minutes left to cook, put some ketchup over the top of the meat loaf.
- When finished, take the pan out. Cover with foil until ready to serve.
- Slice into 1 inch sections. Serve with ketchup.
